However, if you prefer a simpler option, you can easily omit the beans and enjoy a plain tomato salad using the same technique.

Ingredients

2-3 large, high-quality tomatoes

salt and pepper

2-3 tablespoons of high-quality extra virgin olive oil

a small amount of freshly chopped parsley

1 jar of cannellini beans (or butter beans)


Method

1. Ensure that your tomatoes are at room temperature before beginning. This is crucial for enhancing the flavors, so if they have been refrigerated, allow them to sit out for some time.
